What You Need

For the crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the cheesecake filling:

  • 24 oz (680g) cream cheese, softened

  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream

For the topping:

  • 1 jar (10.5 oz) Amarena cherries, drained (reserve syrup)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Additional Amarena cherries for garnish (optional)

What To Do

Preheat your oven to 325°F (160°C). Grease the bottom of a 9-inch springform pan.

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar for the crust. Stir until the mixture resembles wet sand. Press the mixture into the bottom of the prepared springform pan, creating an even layer. Place the pan in the refrigerator to chill while you prepare the filling.

In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition. Finally, mix in the sour cream until well combined.

Pour the cheesecake filling over the chilled crust in the springform pan. Smooth the top with a spatula to ensure an even surface.

Place the pan in the preheated oven and bake for approximately 60-70 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour to cool gradually.

After cooling, remove the cheesecake from the oven and refrigerate it for at least 4 hours or overnight to set completely.

Once the cheesecake has chilled, prepare the topping. In a chilled mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.

Remove the sides of the springform pan and transfer the cheesecake to a serving platter. Spread the whipped cream over the top of the cheesecake.

Decorate the whipped cream with the drained Amarena cherries. You can also drizzle some of the reserved cherry syrup over the top for added flavor and visual appeal.
