When it comes to tasty treats, sometimes nothing really beats a good cookie. These monster cookies are always satisfying, and they’re a perfect way to use up any leftover Halloween candy. You can add in pretty much whatever you like as mix-ins, which is part of what makes this cookie recipe so great. These franken-monster cookies pretty much just combine whatever you’ve got on hand in one delicious cookie. You can even freeze the cookie dough for up to 3 months, so once you make a batch, you can halve it and have some ready in the freezer anytime you need to whip up a quick batch of cookies.
What You Need
1 3/4 cup AP flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
3/4 cup softened unsalted butter
150g granulated sugar
105g packed light brown sugar
2 large eggs at room temperature
1 teaspoon pure vanilla extract
170g M&Ms
140g unsalted peanuts
90g rolled oats
30g crushed pretzels
What To Do
Preheat your oven to 350F and then line two baking sheets with baking parchment. In a medium sized bowl, mix together the flour, baking soda, cinnamon, and salt.
In a separate, large bowl, beat together using a hand mixer (or in a stand mixer) the butter with both types of sugars until you have reached a fluffy consistency, which should take between 2 to 3 minutes.
Add in the eggs, one by one, and the vanilla and then continue to combine. Change the mixer’s speed to low and slowly mix in the dry ingredients until everything has just combined. Mix in the candies, nuts, oats, and pretzels on low until it’s all just combined.
Scoop out the dough, shape into small balls and place them 3 inches apart on the baking sheets. Flatten the balls a bit with your hand.
Bake the cookies for about 16 to 18 minutes, rotating the baking sheets from front to back and top to bottom about mid-way through. The cookies will be golden brown with set edges when finished.
Allow the cookies to cool completely before devouring!
